Old Fashioned Pear Preserves

“Pearl made the biscuits. My mom made the preserves. Pearl's biscuits were two layers of small, circular puffs of dough. She put bottom circles in pan, then poured or brushed melted butter on them. Then she put the top circles on and baked. Let me tell you....outta sight. She also made outstanding fudge and apple dumplings. Good grief, I am hungry.”

Dorace and her family would come to the farm each summer in the 50s and 60s. They’d stay with my aunt and uncle down beyond the baptist church and the family cemetery. We started that church, we filled that cemetery. Our land was part of one of those original land grants. Our blood runs through this soil and the cool spring fed waters of Walton’s Creek flows through our veins. These preserves were inspired by the memories of those summers on the farm.
